Eierkuchen
Since my childhood, Eierkuchen (pancakes) have been one of my favorite dishes. In Germany, these pancakes, known as "Eierkuchen," have a rich culinary history. They have been a staple in German cuisine for centuries, with variations found across different regions of the country.
The tradition of making pancakes in Germany dates back to medieval times. Initially, they were simple dishes made with basic ingredients such as flour, eggs, and milk, cooked on a hot griddle or in a pan. Over time, various regions developed unique recipes and methods for preparing Eierkuchen.
In many German households, Eierkuchen is a popular dish for breakfast, lunch, or dinner. They are often served with various toppings, ranging from sweet options like fruit compote, jam, or powdered sugar and cinnamon.
Ingredients:
For the batter
- 4 eggs
- 2 tablespoons sugar
- 1 package vanilla sugar (0.32 oz)
- A few drops of aroma extract (vanilla, orange, lemon)
- 2 cup all-purpose flour
- 2 cup milk
- Pinch of salt
- 1 teaspoon baking powder
- Butter
For the topping
- Applesauce with cinnamon and sugar
- blueberries or strawberries or both
Instructions:
For the batter
1. In a mixing bowl, crack the eggs and beat them lightly with a fork or whisk.
2. Add two tablespoons of sugar, vanilla sugar, and aroma extract to the eggs. Mix well to incorporate. Feel free to be creative with the flavors.
3. Optionally, add a small amount of melted butter (1-2 tablespoons) for a richer flavor.
4. Gradually add the flour to the egg mixture, stirring continuously to avoid lumps.
5. Pour in the milk gradually while continuing to mix until you achieve a smooth batter.
6. Add a pinch of salt and 1 teaspoon of baking powder to the batter. Mix thoroughly to ensure even distribution. Baking powder will help the pancakes rise and give them a lighter texture.
7. Allow the batter to rest for 20-30 minutes. This step is crucial for the ingredients to meld together and for the gluten to relax. Taste the batter to adjust seasoning if necessary; remember, your taste will influence the final result.
Baking the pancakes
1. Heat a non-stick skillet or frying pan over medium heat and lightly grease the surface with butter.
2. Once the pan is hot, pour a ladleful of batter onto the pan, spreading it out thinly to form a round pancake.
3. Cook the pancake for 1-2 minutes on one side until bubbles form on the surface and the edges start to lift.
4. Using a spatula, carefully flip the pancake and cook for an additional 1-2 minutes on the other side until golden brown.
5. Repeat the process with the remaining batter, greasing the pan with butter as needed between batches.
Serving the pancakes
Serve the Eierkuchen warm with your choice of toppings, such as maple syrup, applesauce, cinnamon sugar, marmalade, or fruit compote. Fresh strawberries or blueberries make delightful additions.
