Spinach Mushroom Lasagna


Spinach Mushroom Lasagna stands out for its flavorful combination of earthy mushrooms and nutritious spinach. It offers a satisfying vegetarian option packed with vitamins, minerals, and antioxidants. Spinach Mushroom Lasagna is a hearty and versatile dish enjoyed by many.
This Vegetarian Spinach Mushroom Lasagna has 4 layers of noodles, covered with a sauce mix, ricotta, sautéed mushrooms, an eggplant, and spinach. 
 

INGREDIENTS

For the Sauce Mix:
1/4 cup extra virgin olive oil
1 cup chopped onions
4 cloves garlic, chopped
1 1/2-pound mushrooms, sliced
1/2-pound shiitake mushrooms, chopped
1 peeled eggplant, chopped
1 (6-ounce) can tomato paste
1 (28-ounce) can of crushed tomatoes
1 tablespoon dried thyme or 1/4 cup chopped fresh basil
1 bag (8-ounce) spinach
1/2 teaspoon red pepper flake
Salt

For the Ricotta Cheese Mix:
1 (15-or-16-ounce) container of ricotta cheese
1/4 pound pecorino cheese (or Parmesan)
1 pound shredded mozzarella cheese (~ 4 cups)
1 Egg

For the lasagna:
12 oz ready lasagna noodles
2 cup tomato sauce
1/2 cup parmesan

METHOD

Oven                     

Preheat oven to 450° F.

Baking Dish         
Spray a 9” x 13” baking dish with cooking spray and set aside.

Sauce Mix

  1. Heat oil in a skillet over medium heat, then sauté onions and garlic until the onions turn light brown.
  2. Add peeled and chopped eggplant and sliced mushrooms, and sprinkle with salt. Cook until the mushrooms release their moisture, and it almost evaporates.
  3. Add tomato paste, sauce, and crushed tomatoes to the mushroom mixture. Stir in spinach, thyme, or basil and a dash of red pepper flakes.
  4. Allow the mixture to simmer for approximately 5 minutes, letting the flavors meld together.
  5. The sauce is ready to be used.

Lasagna Noodles 

Use oven–ready Lasagna noodles for your convenience. 

For better results, soak noodles for 15 min in hot water (or add ½ cup water to each layer of noodles).

Ricotta Cheese Mix
Combine egg, ricotta cheese, mozzarella, and Parmesan cheese in a bowl, stirring until well mixed. 
 

ASSEMBLE THE LASAGNA IN THE FOLLOWING WAY

  1. Spread a thin layer of tomato sauce at the bottom of the casserole dish.
  2. Place a layer of lasagna noodles over the tomato sauce, slightly overlapping.
  3. Spread a thin layer of the prepared ricotta cheese mix over the noodles.
  4. Now add ½ inch of the sauce mix and spread out evenly.
  5. Add a thin layer of fresh spinach with a few basil leaves on top of the sauce mix.
  6. Repeat layers two or three more times: Noodles – Cheese Mix – Spinach – Sauce Mix

FINISHING UP

Spread the remaining sauce evenly over the lasagna noodles, then sprinkle with cheese. Cover the dish with foil that has been sprayed with cooking spray.

Baking and Serving

Bake the lasagna for 40 minutes. Then, remove the foil and continue baking for 10 minutes until the cheese is golden and bubbly. Allow the lasagna to cool for 15 to 20 minutes before serving. This resting period helps the lasagna set and makes it easier to slice and serve.
